  • Canned goods get a bad rap and usually, for good reason. High sodium, highly processed, void of the nutrients found in their fresh or flash-frozen counterparts. But that’s not always the case, and certainly not the case with produce.

    Tomato paste, for instance, has more lycopene than fresh tomatoes. Lycopene is antioxidant that keeps arteries open and blood vessels healthy. You can try it in place of ketchup and certainly as a base for certain soups, stews, and sauces.

    In fact, the nutrients in canned fruits and vegetables tend to be relatively stable because they are protected from the deteriorating effects of oxygen.

    So don’t be afraid of using canned fruits and vegetables… just read the labels and avoid those with added sugars and salts.
