  • Safflower, peanut, palm, vegetable, canola, not really the healthiest of oils. And while extra virgin olive oil is heart healthy, it breaks down at high temperatures, potentially forming free radicals. Not something you really want to eat.

    Enter your new hero: coconut oil. Coconut oil has been used in other countries for centuries but is only recentlycatching on in this country, in part due to its promise as a health aid. It’s been used as part of a program in treating Alzheimer’s, Type 1 and Type 2 Diabetes, hypothyroidism, bacterial infections and viruses, and for athletes as an all-natural way to help with sustaining energy levels. It is solid at room temperature and is a heat-stable oil, meaning it cooks well at high temperatures. So rather than breaking down like olive oil, coconut oil maintains its healthy profile.

    So if you need to use a little oil in a recipe, give it a try. You might go cuckoo for coconut oil.
